講演内容:“Super cold chain and its science” 
【講義概要】 
Cold chain logistics is commonly used in the sectors of food, beverage and bio-pharmaceutical industry. It is an effective way to prevent quality degradation by temperature control, namely refrigeration, which is capable to suppress the activity of enzymes and microorganisms, for example. Nevertheless, refrigeration tends to be energy-intensive, and the balance between energy and quality must be carefully considered. Therefore, in terms of the food cold chain, researchers have been dedicated to the interaction between energy and food quality, whereas most of which previously focused on the macroscale (e.g. room scale) and mesoscale (e.g. package and product scale) studies. Recently, the significance of microscale (e.g. tissue and cell scale) studies was stressed by introducing the concept of “super cold chain”. In the present talk, the concept of “super cold chain” is extended to multiscale thermodynamic studies on the interaction between energy and food quality. Its science and future of “super cold chain” are presented. The concept of “super cold chain” is toward to the sustainable agriculture with reduced food loss and environmentally friendly refrigeration.
